Rubin, the son of Sam and Eileen Rubin, was born in Monroe, Louisiana. He went to Neville High School and lettered three times in football (as a running back and a punter, earning all-district honors), baseball, basketball, and twice in track. Rubin started out as a punter and running back for the LSU Tigers football team in 1976.

At Northeast Louisiana University, Rubin started coaching as a graduate assistant in 1981. The year after that, he was hired as an assistant strength coach. He was given a promotion to Strength Coach in 1984, and he held that role through 1985. Rubin returned to Northeast Louisiana University in 1994 after holding the position of strength coach at LSU from 1987 to 1990.

Rubin joined the Green Bay Packers in 1995 as an assistant for strength and conditioning. He held that role while playing for the Packers, who went on to win the Super Bowl XXXI and the NFC Championship the following year. In 1999, he received a promotion to Head Strength and Conditioning Coach. Rubin remained a Packers employee until 2005.
